Strawberry Oatmeal Smoothie

Wondering what to have for breakfast today but have no time to sit down for a meal ?   I love my steel cut oats for breakfast especially when it’s cold outside but in Florida I prefer a smoothie that I can take on the go.   My personal preference is a thick creamy smoothie that resembles and tastes like a milkshake but much healthier !  Usually I add a scope of vanilla protein powder to my smoothie plus frozen fruit, greens and almond milk but I want to get away from the store bought powders as they are expensive and I want to eliminate all processed foods from my diet.   Recently I discovered this Strawberry Oatmeal Smoothie recipe that includes ground rolled oats and cashews from
Tara Stiles new book  “Make Your Own Rules Diet”
and it’s absolutely delicious.  The rolled oats and cashews become the thickening agent and the result is a creamy smoothie just the way I like it.

I recommend that you use a high speed blender like a Vitamix or you may have a lumpy smoothie. Give this recipe a try and let me know if don’t agree that this is absolutely yummy !

Strawberry Oatmeal Smoothie

This creamy strawberry smoothie provides you with your morning serving of oatmeal and healthy fats and tastes like a strawberry milkshake.

Ingredients

  • 1/2 cup rolled oats uncooked
  • 1/2 cup raw cashews unsalted
  • 1 cup frozen strawberries
  • 1 - 3/4 cups almond milk or coconut milk
  • 1/2 tbsp maple syrup any sweetener will work
  • 1 tsp vanilla extract
  • 1 tsp cinnamon

Instructions

  • First blend the rolled oats and raw cashews in the blender until they are a finely ground like powder.
  • Then add the remaining ingredients and blend on high for a few minutes. You may need to adjust the amount of almond milk if the consistency is too thick. Blend until creamy smooth and Enjoy !

Notes

I like to put my smoothies in an insulated cup with a straw so it stays cold longer and won't spill when I am travelling.
