Sauted Kale with Dried Plums

Ingredients

kale
chopped

dried plums
diced

dried mustard

cumin powder

coconut oil

coconut flakes (medium to large)
toasted
Instructions
Toast the coconut flakes in a 350 F. oven until golden then set aside.
Strip the kale leaves from the stalks and chop into bite size pieces and wash. Do not spin the kale as some water is good when cooking.
Heat 1 tbsp. of coconut oil in a fry pan and add the chopped kale and diced dried plums and saute until the kale softens.
Stir in 1 tsp each of dried mustard and cumin and serve with toasted coconut sprinkled on top.
