Sauted Kale with Dried Plums

Ingredients

  • 1 bunch kale chopped
  • 1/2 cup dried plums diced
  • 1 tsp dried mustard
  • 1 tsp cumin powder
  • 1 tbsp coconut oil
  • 1/4 cup coconut flakes (medium to large) toasted

Instructions

  • Toast the coconut flakes in a 350 F. oven until golden then set aside.
  • Strip the kale leaves from the stalks and chop into bite size pieces and wash. Do not spin the kale as some water is good when cooking.
  • Heat 1 tbsp. of coconut oil in a fry pan and add the chopped kale and diced dried plums and saute until the kale softens.
  • Stir in 1 tsp each of dried mustard and cumin and serve with toasted coconut sprinkled on top.
