Green Beans with Cherry Tomatoes and Walnuts

These steamed green beans are tossed with cherry tomatoes, onions and walnuts and can easily be made ahead of any gathering of friends and family.

Ingredients

  • 500 grams fresh green beans approx. 1 pound
  • 1 Clove garlic minced
  • 10 cherry tomatoes halved
  • 1 tbsp purple onion minced
  • 2 green onions minced
  • 1 Tbsp Cold pressed extra virgin olive oil
  • salt and pepper to taste
  • 8 walnut halves finely chopped

Instructions

  • Remove the stems from the beans, rinse and then steam them in medium pot of boiling water until they are tender crisp. Drain the water and place the beans in a large bowl.
  • Toss the remaining ingredients with the steamed beans except for the walnuts. If you are serving cold then refrigerate until serving time.
  • Sprinkle with walnuts at serving time.

Notes

This dish can be served warm or cold.  Also any type of tomato will work with this dish but then you will need to adjust the number of tomatoes called for depending on the type you use.
