Mix all ingredients together except for the olive oil and form into 8 patties. Patties should measure about 1 and 1/2 inches wide and about an 1/2 inch thick. These can be made ahead and refrigerated for up to 8 hours.
Heat olive oil in fry pan on medium heat and fry until golden brown.
Serve patties with cranberry sauce and/or leftover gravy.
Notes
This recipe works well with regular mashed potatoes too. If your mashed potatoes are on the dry side, please omit the bread crumbs.
