Curried Turkey Patties with Cranberries and Kale sauteed with Dried Plums

What to do with your leftover turkey, sweet potatoes and gravy ?  Why not make these yummy patties.  If you have a lot of turkey leftover then make another batch with regular mashed potatoes too and see which one your family likes best.   Both potatoes work well with this recipe.    Don’t forget to bring out the left over cranberry sauce as well.  YUM !

Ingredients

  • 1 cup sweet potatoes mashed
  • 1 and 1/2 cup turkey, cooked diced
  • 1 egg beaten
  • 1 green onions chopped
  • 2 tbsp curry powder (medium)
  • 2 tsp dijon mustard
  • 1/4 cup bread crumbs optional
  • 1 tsp salt
  • 1 tsp black pepper
  • 1-2 tbsp olive oil

Instructions

  • Mix all ingredients together except for the olive oil and form into 8 patties. Patties should measure about 1 and 1/2 inches wide and about an 1/2 inch thick. These can be made ahead and refrigerated for up to 8 hours.
  • Heat olive oil in fry pan on medium heat and fry until golden brown.
  • Serve patties with cranberry sauce and/or leftover gravy.

Notes

This recipe works well with regular mashed potatoes too.  If your mashed potatoes are on the dry side, please omit the bread crumbs.
