Green Eggs and Ham !

The Vegan and Vegetarian debate is an interesting one which I have been struggling with over the past few months.  As  I create my new vegan meals, I debate in my mind whether I want to give up my favorite standby “the EGG”.  I know there are many egg substitutes for baking and cooking without eggs but not when I want to make a lovely spinach and mushroom omelet or just have a boiled egg  on toast with cherry tomatoes.

True Vegans have a strong belief in eating nothing that come from animals whether it is butter, eggs, milk, chicken or seafood. Although I am trying to incorporate more plant based and unprocessed foods in my diet, I am not 100% there yet and may never be. I believe we need to eat what makes our bodies feel good and as human beings we need to consider the source of our food that feel right in our mind and heart.    I recommend to buy as much as you can from local producers and farmers markets and/or organic if you only have access to grocery stores.

Fortunately our float home is located in farmlands of Ladner BC and fresh local produce and eggs  are available on Westham Island and from Keith’s on Kettles Road a two minute walk across the road from where I live.  A few months ago Keith started carrying the colorful eggs of the Araucana chickens raised by a local farmer.  These eggs come in light blue, pink and green and taste amazing.  The first time I saw the green eggs, it reminded me of the Dr. Seuss story I used to read many times over to my son when he was a preschooler, so I thought I would share part of it with you.  Oh the memories!

Excerpt from Dr. Seuss’ Green Eggs and Ham Book:

You do not like green eggs and ham?
I do not like them, Sam-I-am.
Could you, would you,
with a goat?
I would not, could not.
with a goat!
Would you, could you,
on a boat?
