These energy balls are quick and easy to make and are a great snack anytime you need a sweet treat or with your favourite cup of tea. Store in a Tupperware container in your refrigerator for up to a week or freeze and take a few to work and they will be ready to eat for your morning break.
Buy organic ingredients where you can and make sure your nuts are raw as to avoid any additional salt. You will be surprised at how sweet these energy balls are without any added sugar. The sweetness is coming from the medjool dates which have a rich, almost caramel-like taste and are widely regarded as the “best” variety of dates. They are certainly the largest and are usually also the most expensive to buy. Medjool dates only contain about 66 calories each and are a good source of fiber and contain high levels of the essential minerals potassium, magnesium, copper, and manganese. Best place to buy them is in your bulk food section of your favourite store.
Raw Nutty Energy Balls
Ingredients
- 1/2 cup raw almonds
- 1/4 cup raw walnuts
- 1/4 cup raw pumpkin seeds
- 8 large medjool dates pitted
- 1/4 cup raisins
- 1/4 cup goji berries sun dried
- 1/2 tsp cinnamon ground
- 1/4 tsp cardamom ground
- 1/4 cup raw almond butter
- 1/2 cup shredded coconut
- 2 tbsp raw cacao powder
Instructions
- Use the "S" blade for processing and finely grind the almonds, walnuts and pumpkin seeds in a food processor.
- Add the dates, raisins, goji berries and spices to the food processor and process all the ingredients to a fine meal. If you love chocolate then add 2 tablespoons of cacao powder in this step but these energy balls taste great with or without chocolate.
- Add the almond butter and process again until thoroughly mixed.
- Form into balls and roll in the shredded coconut.
- Store in an air tight container in the refrigerator for up to two week or freeze half and use later.
