My sister Alice gave me some of her dried purple plums when I was visiting Kamloops last week so I wanted to prepare a dish that would include them. So if you like the taste of sweet and savory this dish is for you. I made this last night for my friends Debbie and Warren as our green veggie side dish to the Curried Turkey Patties. This dish is a keeper…..why not try it with any dried fruit you may have in your cupboard….be creative!
Sauted Kale with Dried Plums
Ingredients
- 1 bunch kale chopped
- 1/2 cup dried plums diced
- 1 tsp dried mustard
- 1 tsp cumin powder
- 1 tbsp coconut oil
- 1/4 cup coconut flakes (medium to large) toasted
Instructions
- Toast the coconut flakes in a 350 F. oven until golden then set aside.
- Strip the kale leaves from the stalks and chop into bite size pieces and wash. Do not spin the kale as some water is good when cooking.
- Heat 1 tbsp. of coconut oil in a fry pan and add the chopped kale and diced dried plums and saute until the kale softens.
- Stir in 1 tsp each of dried mustard and cumin and serve with toasted coconut sprinkled on top.
